This is called Hen Of The Woods mushroom and I find them to be my favorite and the only one I'm sure is safe to eat. This was a good year for finding them. Please click on Photo to enlarge

Lots of good eating there Ray. I agree it's one of the safer ones, but morels are pretty fool proof too if you can find them!

I have eaten morels once and they were delicious. Morels are also very pretty little mushrooms and I heard they are quite expensive.

I find them very tasty and have been eating them every day this week. One of them must have weighed 30 lbs. I think the cool weather we are supposed to get will put a end to them for this year though.

Wild mushrooms, yummy!

Lucky you people who can go and find mushrooms in the wild. Not like us here living in the middle of concrete jungle who can only depend on whats available at the supermarket. The mushrooms bought from the market are not as sweet as ones from the wild :( .

Fred

I thought the name of this mushroom sounds familiar and has something to do with traditional chinese medicine. so I copy a few phrases on the internet here.

"Hen of the woods"
Maitake

The Japanese name for a mushroom that is both edible and medicinal, mushroom hunters know it as "hen of the woods" because it grows in clusters at the base of trees that mimic the tail feathers of a nesting hen. Andrew Weil says it's a tasty mushroom with remarkable tonic effects, especially on the immune system. "Research in Japan indicates it has significant anti-cancer, antiviral and immune-enhancing properties. I recommend often to people with cancer, Aids and other immune-deficiency states, chronic fatigue syndrome and environmental illnesses that may represent toxic overloads."

Maitake have been used for hundreds of years in Japanese and Chinese medicine. They are traditionally believed to be of particular benefit to the liver and lungs, cleansing and neutralizing toxins. Modern researchers have conducted numerous studies focusing on maitake’s healing properties in regard to various types of cancer and immune system problems. Of interest are carbohydrates in maitake called polysaccharides, in particular beta glucan which researchers believe may be largely responsible for maitake’s immune activating and anti-diabetic properties. Other research is finding that maitake may significantly lower blood pressure and cholesterol, and help control body weight by metabolizing fat.

I think they are quite expensive too.

Thank You Hien, for the info. I have RA which leaves me with very poor immune system so I guess I am doing myself aa favor by enjoying them so much.

Hi fred
According to some authors, certain mushrooms are considered adaptogen. Which mean they raised the weak immune while reduce auto-immune imflammation such as RA. for example Reishi is considered a longevity super herb by Asian.
Since you are fond of mushroom, do check out this web site:www.fungi.com/ . It has a lot of information
for information in a chart on the same web site
